Homemade Pancakes With Nutella And Bananas

Who doesn't love pancakes? To me, nothing says "relaxing weekend morning" like a big stack of fluffy pancakes. During the week we are usually rushed between getting ready for work and getting the kids off to school. But on the weekend we have the luxury of taking our time and savoring a warm breakfast. International Pancake Tuesday is on Tuesday February 17th so it is the perfect time to try out some new pancake recipes. We usually enjoy Nutella® hazelnut spread on toast or as a dip for fruit, but we decided to use it as a topping on pancakes and it was perfect! Try these Homemade Pancakes with Nutella and Bananas and see if you don't agree.
Ingredients for 4 servings of 2 pancakes each:
- 1 cup flour
- 2 teaspoons of baking powder
- 2 tablespoons of sugar
- 1/2 teaspoon of salt
- 1 teaspoon of cinnamon
- 1 egg
- 1 cup of milk
- 2 tablespoons of oil
- 1 teaspoon of vanilla
- 1/4 cup (4 tablespoons) of Nutella
- 1 large banana
In a large bowl, mix together flour, baking powder, sugar, salt and cinnamon. In a small bowl, beat together the egg, milk, vanilla and oil.
Pour the wet ingredients into the bowl with the dry ingredients and stir to combine. Do not overmix.
Heat a non stick griddle or non stick skillet to medium and pour the batter on to make the pancakes. I used a 1/4 cup of batter for each pancake. Leave enough room so that the pancakes are not touching.
When the top of the pancakes start to bubble and the bottoms have browned, flip them over and cook for another minute. Remove the pancakes from the heat and place on a plate.
Slice up the the banana and spread some Nutella on a pancake. Add some bananas on top of the Nutella and cover with another Nutella topped pancake.
Continue to cover each layer in Nutella and bananas until your reach the top layer where you will just spread the Nutella.
Needless to say, these pancakes don't require any syrup since the Nutella and bananas provide the sweetness. My husband and I shared a stack of 3 Homemade Pancakes with Nutella and Bananas and it was the perfect portion size for two. Of course we shared some with the kids too who loved them every bit as much as we did. The combo of Nutella, pancakes, and banana is a winner and yet another way to enjoy Nutella.
