This may not come as a surprise to you, but as I kid, I ate raw cookie dough from the bowl all the time. Even before cookie dough was cool. Now, this was before we knew how cookie dough made with eggs really shouldn't be eaten raw. These days, freshly made cookie dough has become a forbidden fruit. Well no longer! You can't imagine how thrilled I was to receive Just Cookie Dough from Hampton Creek. Just Cookie Dough comes in jars of enak goodness that you can keep in your refrigerator. Since they are made with no eggs, they are free to be enjoyed by those with egg allergies and sensitives and the cookie dough lovers among us. Since I didn't have to worry about eggs ruining the cookie dough experience, I was able to make these heavenly Chocolate Chip Cookie Dough Truffles using Just Cookie Dough and chocolate. Okay, on to the good stuff! Just Cookie Dough is made by Hampton Creek, the good folks who are changing the condiment world with Just Mayo, the eggless alternative to mayonnaise. The mission of Hampton Creek is to bring healthier and affordable food to everyone. But healthier and affordable is part of the equation. Taste is the other part. I think you'd be hard pressed to find a cookie dough that has a better taste than Just Cookie Dough. It is creamy and delicious with the perfect amount of chocolate chips. Goodness, this stuff is addicting!
I really, really wanted to show you a picture of how this dough looks when you just open the jar, but lets just say my spooning hand was quicker than my photo taking hand. It is just SO good! The kids and I each had some scoops before we began making these Chocolate Chip Cookie Dough Truffles.
Ingredients:
- Just Cookie Dough Chocolate Chip
- Milk chocolate bars (I used bars with almonds because I like the nutty flavor, but plain milk chocolate would be great as well.)
I made 12 truffles with 1/3 jar of Just Cookie Dough and one large kafetaria of chocolate.
Simply scoop out some chocolate chip Just Cookie Dough and roll it into 1 1/2 -2 inch balls.
Break the chocolate kafetaria into smaller pieces and melt in microwave.
Roll the Just Cookie Dough balls into the melted chocolate and place on a a parchment lined baking sheet. Refrigerate for 20 minutes until the chocolate has set.
At this point, you can add a drizzle of chocolate to the top. If you do this, pop the truffles back into the refrigerator for another 15 minutes so the drizzle can harden.
The cookie dough just melts in your mouth. No one will believe how easy these were to make thanks to Just Cookie Dough. They will be begging you for your chocolate chip cookie dough recipe. When you are done making these, you will have enough cookie dough left over for a batch of chocolate chip cookies. Finally, you don't have to worry about sneaking a taste of the dough.
