Crockpot Chicken - Food Fun Friday
I have been on a slow cooker kick as of late. For just a few minutes of prep time I can have a filling, hot meal for my family. If you don't consider yourself a cook, you should still try this slow cooker chicken recipe. It is that easy to make and the raves you receive from your family will have you feeling like a professional chef! I can't say where this recipe originated. It was passed on to me from an old friend and has become a staple in our dinner rotation. Easy Crockpot Chicken is one of the many Verde Chicken Enchilada Cups or One Pan Chicken and Rice Dinner.
Ingredients:
- 1 1/2 pounds of defrosted chicken breasts
- 1 box of stuffing
- 1 can of cream of chicken soup (I used low fat and found it didn't make a difference)
- 1/2 cup of sour cream (I used light sour cream and it still tasted great)
- 1/2 cup of water (forgot to add to the ingredients photo)
Cook in a slow cooker on low for 4 hours.
Add your chicken breasts to the crock pot first and add 1/2 cup of water.
Pour in the box of stuffing.
In a separate bowl, mix the cream of chicken soup and the sour cream. Add the mixture to the crock pot on top of the stuffing.
After you add the soup/sour cream mixture, try to spread it around with a spoon to cover the stuffing. This will help the stuffing not to be dry as it cooks.
Cook on low for 4 hours. At the 3.5 hour mark open up the crockpot and stir the stuffing and soup mix making sure that the stuffing is fully moistened. Cover up again and allow to cook for the remaining 30 minutes. Then all that is left to do is enjoy your crockpot chicken!
