Banana Muffins

Hallmark has been playing Christmas movies nonstop which means I've been watching Christmas movies nonstop. Well, I'm not that bad, but I have been watching quite a few. They all follow the same plot, more or less, but I'm addicted. It's Christmas--how can you not love the sappy, romantic stories centered around finding the Christmas spirit?

And it's in these moments of watching families eat Thanksgiving meals, Christmas Eve meals, and baking assortments of Christmas goodies that I indeed follow suit and make my own feasts. A Christmas movie on in the background, the panggangan on and warming up the kitchen (because it finally got cold here--yay!), and the anticipation of the end result. Granted, in these movies, the end result generally is a marriage anjuran so my end result might be slightly anti-climatic in comparison, but a good dish is a pretty close second.


Warm banana muffins whilst watching the pinnacle scene of a feel good Hallmark movie? It's a good feeling. 

Recipe:
2 c flour
1/2 tsp baking soda
1/4 c raw sugar
1/4 c brown sugar
1/2 c honey
2 Tbsp maple syrup
2 Tbsp vanilla yogurt (optional)
1/4 c butter, melted
1/4 c apple sauce
3 bananas
2 large eggs
1 tsp vanilla extract

Preheat panggangan to 350. Mix flour, baking soda, and raw sugar together. In another bowl, mash the bananas with brown sugar. Next, add in honey, maple syrup, yogurt, and vanilla. Once mixed, add the melted butter, applesauce, and eggs until combined. Make a well in the center of the dry ingredients and  add in the wet ingredients. Stir until completely moistened and combined. Makes 12 muffins. Bake for 12-15 minutes. 

Enjoy them with your favorite cheesy Christmas movie!
