Fruit And Yogurt Parfaits
This past weekend was spent hanging out with one of my closest friends and eating more junk food than imaginable, hence the light yogurt parfait.
Amidst catching up on each other's lives, we drank coffee, ate nuggets and fries, drank milkshakes, had pizza, and snagged some apple turnovers for breakfast.
Everything was delish. And everything was pretty bad for my health.
Today, I opted to lighten things up a bit with a nice, fruity yogurt parfait filled with strawberries, raspberries, blueberries, bananas, and vanilla yogurt.
Add in a little granola for some texture crunch, and you've got a meal made.
These are easy to throw together, yet they look like they took hours. Of course, I took the time to layer everything for picture-sake, however, this could easily be thrown into a bowl sans layering.
Recipe: 2 Parfait Cups
1 c yogurt (I used vanilla, but you could use any flavor or kind)
1/4 c bananas
1/4 c raspberries
1/4 c strawberries, chopped
1/4 c blueberries
1/2 c granola (store bought or favorite homemade recipe)
2 Tbsp brown sugar (optional)
In a glass, alternate layering yogurt, brown sugar, fruit, and granola. I generally start with a bottom layer of yogurt, followed by a sprinkling of brown sugar (I think it adds some body to the yogurt), fruit, and lastly the granola.
Personally, I detest Greek yogurt, but you could easily make this recipe with Greek yogurt.
