Fluffernutter Ritz Sandwich Cookies
Do you remember those incredibly good peanut butter cheese sandwich crackers? Every time those made an appearance in my lunch, I knew it would be a great day at recess.
These are like those, yet entirely different. It's a cross between those and Girl Scout cookie Tag-A-Longs (which I don't think is the name anymore, but really, who can keep up with how often they change the names of their cookies) with the addition of marshmallow fluff.
It's childhood wrapped into one delightfully, sinfully incredible five-minute cookie.
Because of the simplicity of this snack, multiple ones can be made ahead of time to have on hand, or they can be whipped up at a moment's notice whenever the craving hits, which for me was this morning.
Last night, my adorable one-year old pup (she's a Germansheprador) was given the privilege to sleep outside of her crate. She loves her crate, but she had fallen asleep in my room and looked too cute sound asleep with her head on a floor pillow to move her into her crate. She's old enough where she can be left inside alone without chewing things up, so I risked it and thought she would sleep through the night soundly outside of her crate.
Well, things really didn't go as planned.
At 3am when I woke up to two dog paws and a dog face on my bed, she got put to bed inside of her crate. But because her sleeping pattern was off, I was concerned she wouldn't sleep well and would need to be let out earlier than normal, which threw off my own sleeping pattern so I was awake way earlier than normal.
With coffee in hand, I snagged one of these babies and indulged. I keep a stock of these in the fridge (because I love them cold) for special occasions such as this.
So, lesson learned. My pup needs her crate because I need my sleep. A few more nights like that, and my morning indulgences will become a habit, and I'll need to kick my exercise regiment up a notch.
Yeah, I'd rather not.
Recipe:
Peanut Butter
Ritz
Marshmallow Fluff (or marshmallows)
Dipping Chocolate (for a recipe of 12, use 1 1/2 c chocolate chips with 1 1/2 Tbsp shortening, melted)
Preheat panggangan to 350. For a recipe of 12 cookies, lay out 24 Ritz crackers. Spread your desired amount of peanut butter on 12 of the crackers and your desired amount of marshmallow fluff onto the other 12 (if using marshmallows, place 3 small marshmallows on the 12 peanut buttered crackers, leaving the other 12 empty).
Pop them into the panggangan for a couple of minutes just to warm the peanut butter and marshmallow fluff a bit. Once out of the oven, put the ritz together to make sandwiches, and allow them to cool completely.
While they cool, melt chocolate chips and shortening. If using the microwave, be sure to melt the chocolate in small increments at 50% power, stirring after each time, otherwise the chocolate might seize.
Dip the sandwiches into the melted chocolate with a fork. Tap fork against the side of the bowl to drop any excess chocolate off of the cookies. Allow them to cool on parchment paper. If you want to add anything to the top like honey roasted peanuts (as pictured), sprinkles, graham cracker crumbs, or a drizzle of melted peanut butter chips, do so before the chocolate cools completely.
They are that easy and pack a punch with incredible flavor. Plus, if you are a Tag-A-Long fan like I am, these are a great substitute for when those cute little Girl Scouts are no longer outside of every grocery store suckering all of us out of our money.
