Cinnamon French Toast Bites
Sometimes, there's nothing like french toast. It's thick, fluffy, and covered in a batter that gives it extra texture. When I was in college, it was my go-to meal when I was stressed or needing something that reminded me of home. Comfort food to the max.
What I love about french toast is its versatility. It can be normal sized, it can be bite sized, it can be stuffed, it can rolled--it can be turned into anything, and almost anything can be turned into it.
Today, I chose to make cute little french toast bites that are dipped in cinnamon sugar and dusted with powdered sugar. Sweet and savory and downright delicious.
I used a thick cinnamon bread from this great bakery down the street as the base for these bites, and I have to say, the already cinnamon-y bread really added a depth of flavor to these bites.
Of course, these can be made with egg bread, texas toast, sandwich bread, croissants, muffins...
Like I said, french toast is versatile, which is why it's the perfect go-to meal! You can use anything in your fridge as the bread base, and can add any ingredient to the batter. If not interested in a churro-inspired bite, consider adding in maple syrup and bacon bits. For extra decadence, make a caramel apple version. For dessert, skip the syrup and dip the bites into a chocolate dipping sauce.
And, now I'm pretty sure I'm drooling.
So worth it.
I ate that entire bowl and I could easily go another round. Maybe two.
I love carbs, what can I say?
Recipe: 4 slices
2 eggs, beaten
2 Tbsp flour
1 tsp vanilla
1/2 c milk
Cinnamon Sugar
4 slices thick cut cinnamon bread
Mix all ingredients together except bread and cinnamon sugar. Set aside. Turn the stove on over low heat, allowing the skillet to heat up (I would suggest using a non-stick cooking spray or butter to avoid the french toast batter sticking).
Cut the bread into equal sized squares and dip into the batter, coating all sides. Place the pieces of bread into the skillet, then sprinkle the cinnamon sugar over each piece. Cook over medium heat, until all sides are golden brown.
When the bites are golden brown and done, sprinkle on more cinnamon sugar and add powdered sugar.
Serve with a side of syrup, whipped cream, or sweet sauce.
