How To Make Chatpati Kachori
Recipe by Naiya Sheth: Once again ekspo is here. And here in India time for lots of celebrations and snacks. In earlier recipes, we made lots of kachoris like raj kachori, khasta kachori, dahi kachori, pyaz kachori, tuver lilva kachori etc. But now it's time to make different and delicious chatpati kachori. So let's try this mouth watering and quick recipe this festive season. The most interesting part of this kachori is that only assembling is required at the time of serving.

Ingredients to make Chatpati Kachori:
For kachori dough:
1 cup refined flour
2 to 3 tablespoon semolina - sooji
2 tablespoon oil
1 teaspoon ghee- clarified butter
Salt to taste
1/2 teaspoon black pepper powder
Oil for frying
For dry masala:
1 tablespoon fennel seeds - variyali
1 teaspoon dry coriander seeds
1 1/2 teaspoon cumin seeds
1 tablespoon roasted peanuts
1 tablespoon roasted sesame seeds
Salt to taste
1 teaspoon red chilli powder
1/2 teaspoon dry mango powder
Other ingredients:
Finely chopped cucumber
Finely chopped capsicum
pomegranate seeds
Masala bundi
Fried chana dal
Whisked curd
For garnishing:
Nylon sev
Grated beat
Finely chopped onion
Finely chopped coriander leaves
Method to make Chatpati Kachori:
For kachori:
- Mix all ingredients of dough and make stiff dough from it with sufficient water.
- Keep aside for minimum 20 minutes.
- Make equal balls from it and roll small puries from it.
- Fry at slow flame till crisp.
- Keep aside in airtight container when cool.
For dry masala:
- Mix all ingredients of dry masala. Don't make it smooth.
How to assemble:
- In a serving plate place a kachori and make a big hole in it. Fill with cucumber, capsicum, pomegranate, chana dal and masala bundi.
- Sprinkle some dry masala powder on it.
- Pour some curd, sweet chutney and green chutney as per the taste.
- Cover with nylon sev and then garnish with beat, onion and coriander.
- Sprinkle some dry masala again.(opt.)
- Quick and delicious Chatpati Kachori is ready to serve.
