Cheesy Broccoli Soup Pressure Cooker Recipe With Produce From Farm Fresh To You

As a family of five, we go through a lot of produce each week. My kids are picky, but one thing they can never get enough of is fruit. This means I am usually stopping at the grocery store 3 times a week to pick up fruit for them to enjoy. I was even inspired to make some Cheesy Brocc0l1 Soup in the pressure cooker using my just delivered brocc0l1.

 


Signing up for a Farm Fresh To You subscription couldn't be easier. I just went on the website and picked from the many options available to me. I could choose from a fruit and veggie mix, traditional, no cooking, only fruit, only veggie and even a snack pack that makes snacking on healthy fruit a breeze. Then there are the sizes and delivery options. Sizes range from small to monster depending on the size of your family. I also got to choose how often I would like the box delivered. It can be weekly, every other week or every 3-4 weeks.


My box was on my doorstep early in the morning on my scheduled delivery date. When I opened the box, I was greeted by a wonderful assortment of fresh fruits and vegetables. Opening the box reminded me a little of opening a present. I was so excited to see what was in there! Each box comes with a list of the organic produce included, but I didn't look at my list because I wanted to be surprised as I pulled out the contents.


As an added bonus, the box makes an excellent cat bed. If you don't happen to have a cat, no problem, Farm Fresh To You will collect and recycle the box on their next visit.


I ordered a More size No Cooking box and it contained all of this! The box included: black grapes, celery, pomegranates, assorted lettuce, apples, persimmons, kiwis and more.


Rarely has my daughter seen veggies that look like this. She loved seeing the tops of the carrots and red radishes.


When it was time for snack, of course my daughter wanted to try some of the newly delivered fruit. Since the contents of the box are 100% certified organic, I feel good letting her have as much as she wants. The organic produce would also be great for making baby food or family friendly recipes.


I used the brocc0l1 to make a cheesy brocc0l1 soup that pairs well with a sandwich or a piece of crusty bread. I recently bought an electric pressure cooker and was excited to see how it did with vegetables. Please refer to your pressure cooker instruction manual for specific instructions and safety information.

Ingredients:
  • 3 teaspoons of butter
  • 1 clove of chopped garlic
  • 5 cups of chopped brocc0l1
  • 5 cups chicken broth
  • 1 1/2 cups of milk
  • 2 cups of shredded cheddar
  • Salt and pepper to taste
Makes 8-10 servings.



With the pressure cooker open and on the brown or heat setting, melt the butter and brown the chopped garlic.

Add 5 cups of chicken broth and 5 cups of chopped brocc0l1.Close lid and steam valve on top and hit the soup setting or set the timer for 15 minutes. After 15 minutes release the steam valve and open after all the steam has been released.

You will now need to blend the soup. I have an immersion hand blender that I used, but you can also pour the contents into a blender. After blended return the soup to the pressure cooker pot if you removed it. Add milk and shredded cheddar cheese and stir until cheese is melted. Leave in pressure cooker on warm setting until the soup is completely warm.

I love rich, creamy soups but am not always in the mood for something so heavy.
